Considered the most important and prestigious winery in Traisental, Austria, Markus Huber was founded in 2000, when Markus acquired the family vineyards, to produce quality wines that are an expression of the terroir of this young wine region. The organically grown grapes of Gruner Veltliner, the most representative variety of the Austrian wine scene, are selected from the Alte Setzen vineyard, which is over 60 years old. Fermentation takes place in concrete eggs for about 3 months and the finished wine then rests on the lees for 9 months before being bottled without filtration and released to the market. Metamorphosis is a versatile and vibrant wine with a bright yellow-green color. On the nose, it reveals a broad and complex aromatic profile with fruity notes of white apple and lime, floral hints of hibiscus and lime, and then herbaceous and spicy nuances. On the palate, it has a robust body and an invigorating and vibrant acidic vein. It is fruity and vaguely savory with a long and delicately spicy finish. It is the ideal wine with asparagus and artichokes, and it goes well with spicy Asian cuisine.
